These shrimp curry noodle bowls are packed with veggies and lots of color! Change up this vibrant soup by trying different veggies or using chicken instead of shrimp.

  • 2 Green onions, thin
  • 1/2 Red bell pepper
  • 2 Shallots
  • 1 cup Sugar snap peas
Canned Goods
  • 2 (13.5 ounce) cansCoconut milk, full fat
  • 3 tbsp Red curry paste
Condiments
  • 2 tbsp Lime juice, fresh

  • 1 Large (or 2 small) zucchini, ends chopped off
